Chicken & Vegetable Open Omelette. Using up leftovers in the fridge 🙂 This one had zucchini, red capsicum, mushroom, cherry tomatoes, 1/2 chicken breast & 6 eggs. Served with an orange on the side. Fed the family cheap & healthy for less than a dollar per head.

Ok, I know ~ this is more like a frittata, but let’s face it, “Use-It-Up Frittata” just doesn’t have the same ring to it.
You will need eggs and whatever is leftover in your fridge that needs to be used up before your next shop.
These are a great, easy lunch or dinner at the end of your shopping week (for us that is Sunday)
