Warm Kale Salad

Salmon and Warm Kale Salad with garlic mushrooms, feta, tomato & pine nuts

Arh, Warm Kale Salad.  Our go-to winter vegie mash-up meal.

It’s healthy, it’s cheap, and it’s oh so good!

We like to pan fry some vegies like zucchini, red capsicums and mushroom (even better if you can toss them in some garlic butter!) and serve them up on a bed of wilted kale.  Maybe add some feta and tomato.  Toss in some walnuts or pine nuts.  Who knows!? Get creative.

We have found that to get the BEST kale salad, you have to give it some luuvv…


First, wash it and strip the leaves from the stems.

Keep the stems! ~ dice them up and pop them in the freezer to use in soups and stews  ~ #wastenothing!

Shred the leaves a little and place them in a big bowl.

Drizzle a little olive oil and lemon juice over the top.

Now, get in there with your hands and squish and squeeze.  Massage your kale.  Don’t be afraid!  Your kale will love it (& so will your tummy!)

I like to wilt our kale in a hot pan with just a little bit of water to steam it up.  Toss it around & it will soften up in a minute or two.
